I made this ages ago and writing it up is making me want to have it again soon! Gammon and pineapple is the perfect sweet-savoury combination pairing with with some herby potatoes and my childhood favourite carrot salad. When I was younger Carrot salad was one of the things I used to love making, because 1. It’s so easy and 2. it’s super tasty & healthy.



Cooked gammon joint

1 ring of pineapple

1 big potato or 4 small

1 carrot

1/2 lemon (juice)

1 tablespoon of raisins


  1. Chop and boil potatoes to soften, drain and add to a baking tray with oil (I used vegetable oil) and herbs if you would like.
  2. Grate the carrot add the lemon juice and raisins and mix.
  3. Plate up the gammon and layer the pineapple and add potatoes and salad and fill your belly.
