I made this ages ago and writing it up is making me want to have it again soon! Gammon and pineapple is the perfect sweet-savoury combination pairing with with some herby potatoes and my childhood favourite carrot salad. When I was younger Carrot salad was one of the things I used to love making, because 1. It’s so easy and 2. it’s super tasty & healthy.
Cooked gammon joint
1 ring of pineapple
1 big potato or 4 small
1/2 lemon (juice)
1 tablespoon of raisins
- Chop and boil potatoes to soften, drain and add to a baking tray with oil (I used vegetable oil) and herbs if you would like.
- Grate the carrot add the lemon juice and raisins and mix.
- Plate up the gammon and layer the pineapple and add potatoes and salad and fill your belly.
